Ingredients
- 2 tins tuna in olive oil or water, drained
- 3 tbsp mayonnaise
- 1 stalk celery, finely diced
- 2 tbsp finely diced red onion (optional)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 8 butter lettuce or romaine leaves
- Salt and black pepper to taste
Instructions

Flake the tuna into a bowl with a fork.

Stir in the mayonnaise, celery, onion, lemon juice and mustard.

Season with salt and pepper and taste — add more lemon if it needs brightening.

Spoon into the lettuce leaves and serve cold.
Tips and substitutions
- Keep the salad and the leaves in separate containers so lunch stays crisp.
- Canned salmon or shredded rotisserie chicken work just as well.
- Diced dill pickle adds crunch for almost no carbs.
