Slow-Cooked Herb Beef
Batch-cook comfort food that tastes even better as leftovers. Fifteen minutes of work, then the oven does everything else.

Ingredients
- 3 lb beef chuck roast, cut into large chunks
- 2 tbsp olive oil or beef tallow
- 1 small onion, sliced
- 3 cloves garlic, crushed
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 sprigs fresh rosemary and 3 sprigs thyme
- Salt and black pepper to taste
Instructions

Heat the oven to 300°F. Season the beef generously with salt and pepper.

Sear the beef in the oil in a heavy Dutch oven, in batches, until deeply browned on all sides.

Add the onion and garlic and cook 3 minutes, then stir in the tomato paste.

Pour in the broth, add the herbs, and bring to a simmer.

Cover and transfer to the oven for 3 hours, until the beef pulls apart with a fork.

Rest 10 minutes, skim any excess fat, and spoon the sauce over the meat to serve.
Tips and substitutions
- A slow cooker works too: sear first, then cook on low for 7–8 hours.
- Serve over cauliflower mash or buttered green beans to keep carbs low.
- Freezes beautifully in portions for up to three months.
Feeding the whole family
Shred the leftovers and serve them over mashed potatoes or pasta for family members who aren't eating keto.
