Ingredients

  • 2 lb ground beef
  • 2 tbsp taco seasoning (check for no added sugar or starch)
  • 1/2 cup water
  • 1 head romaine or iceberg lettuce, shredded
  • 1 1/2 cups shredded cheddar or Monterey Jack
  • 2 avocados, sliced
  • 1 cup salsa (no sugar added)
  • 1/2 cup sour cream

Instructions

    Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks.

    Drain the excess fat if you like, then stir in the seasoning and water.

    Simmer 5 minutes until the sauce thickens and coats the meat.

    Set out the lettuce, cheese, avocado, salsa and sour cream in bowls.

    Let everyone build their own bowl at the table.

Tips and substitutions

  • Make your own seasoning with chili powder, cumin, paprika, garlic powder, oregano and salt.
  • Leftover meat is excellent in an omelette the next morning.
  • Cauliflower rice makes the bowls more filling for very little extra carbohydrate.

Feeding the whole family

Put warm tortillas or rice on the table for anyone not eating keto — the beef and toppings stay exactly the same.
