Berries with Vanilla Whipped Cream

Ingredients
- 1 cup heavy whipping cream, cold
- 1 tsp vanilla extract
- 1–2 tbsp powdered erythritol or monk fruit sweetener, to taste
- 2 cups mixed raspberries, blackberries and strawberries
- Lemon zest to finish (optional)
Instructions

Whip the cream with the vanilla and sweetener until it holds soft peaks — stop before it turns grainy.

Divide the berries between four glasses or small bowls.

Spoon the cream over the top.

Finish with lemon zest and serve right away, or chill up to two hours.
Tips and substitutions
- Raspberries and blackberries are the lowest-carb berries — use strawberries more sparingly.
- Coconut cream whips well if you avoid dairy.
- A pinch of salt in the cream makes the vanilla taste stronger without more sweetener.
