Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 tablespoon olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/4 cup chicken broth, as needed to thin the sauce
  • 1 tablespoon butter, optional
  • Red pepper flakes, optional

Instructions

    Heat a large skillet over medium-high heat and add the oil.

    Season the chicken with salt, pepper, and Italian seasoning.

    Add the chicken to the skillet and cook for about 6–8 minutes, stirring occasionally, until browned and cooked through. Remove the chicken to a plate.

    Lower the heat to medium. Add the garlic and cook for about 30 seconds, just until fragrant.

    Add the heavy cream and Parmesan. Stir until the cheese melts and the sauce begins to thicken.

    Add a small splash of chicken broth if the sauce is too thick.

    Stir in the spinach and cook until wilted.
